做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼(yú )和其他(tā )材(cái )料,武火(huǒ )煮沸,转中小(xiǎo )火煲一个半小时,下盐(yán )调味即可品尝。 -
